Mustard Greens

Ahh the veggies, we either love them or hate them. When I started my weight loss journey I had about four veggies I would eat. And I would rotate them from week to week.

Throughout the years I have been slowly adding more veggies to my list. I realized that it was the way that I cooked them that determined whether or not I like them.

These greens are such a good vegetable. Not only are they healthy. They have antioxidants in them that help fight cancer, they also help support your heart and muscles.

I have had many visitors come to eat and shy away from these greens, but once they taste them, they are hooked.

If you have that hate relationship with vegetables, I challenge you to start trying to add more into your diet. You will feel so much better. I know I did.

  • 1 Medium pot I find this is best cooked on the stovetop.
  • 1 Cutting board Use the cutting board to cut the onions first, and then the bacon. This way you can use the same one.

  • 1/2 small yellow onion diced
  • 4 tsps. minced garlic
  • 6 cups water
  • 1 tsp kosher salt
  • 1/2 tsp black pepper I use the large chunks
  • 1 frozen bag of mustard or collard greens
  • 1 tsp sugar in the raw
  • 2 slices bacon
  • jalapenos as many as you want
  • 2 tsp of jalapeño juice.

  • Put all ingredients in a saucepan and fill with water
  • Bring to a boil and then lower and simmer for about 20 minutes. If you don’t like the taste and texture, cook for another 15 minutes.
  • Taste and adjust the seasonings if needed. Make sure it's to your liking because this is how your greens will taste.

This recipe can also be used for collard greens. If you want to make it more heart healthy you can leave the bacon out. If you don't have jalapenos, you can add a little bit of avocado oil.

I never thought I liked mustard greens, until I had these!! Amazing! Now I make them all the time, and any time I cook them for someone else they always ask for the recipe.
