Instant Pot Stuffed Pepper Soup

This stuffed pepper soup is so yummy. It was very important to me in my weight loss journey that I find delicious, healthy and quick meals. This one is loaded with veggies. 

Bell peppers happen to be my favorite vegetable and sometimes I just want a good soup especially on a cold day. 

I cook this meal when I need more veggies at night. I try to eat 4 cups of veggies a day. I don’t always make it, but I try my best to hit that at least 80% of my week. 

Being healthy isn’t just about dropping everything you love and only eating veggies. It is about balance, eating what your body needs but also eating what you love to eat. 

Once I figured this out, I saw sustainable weight loss. It is never about elimination or restricting ourselves. That will always cause me to want to binge something I haven’t eaten in a while. 

Starting to add things like this stuffed pepper soup into your weekly meal plans will definitely help you start your weight loss journey.

Instant Pot Stuffed Pepper Soup

This is a quick and easy meal made in the pressure cooker. You can make it spicy or not spicy with the type of meat you use. Perfect meal for a night where you need something quick!

Equipment

  • 1 Pressure Cooker

Ingredients
  

  • 1 lb ground spicy Italian sausage
  • 1 medium onion
  • 2 bell peppers diced any color
  • 1 tsp minced garlic wet
  • 2 cups cauliflower rice
  • 1 14 oz can fire roasted diced tomatoes
  • 1 14 oz can tomato sauce
  • 3 cups chicken broth
  • ½ tsp dried basil
  • ¼ tsp dried oregano
  • Optional- cheddar cheese

Instructions
 

  • Turn on instant pot to sauté
  • Add sausage, onions and bell peppers and cook until the meat is almost cooked, and the veggies are fragrant.
  • Add in garlic and cauliflower rice and cook for an additional minute
  • Stir in tomatoes, tomato sauce, broth, basil and oregano
  • Close the lid and lock and cook on high pressure for 7 minutes.
  • Quick Release when done.
  • Optional: Top with your favorite cheese.

Notes

This is a delicious meal with the spicy Italian sausage. If you want it to be less spicy you can use ground turkey or ground beef.
