Instant Pot Green Chicken Enchiladas

I love finding healthy recipes where I don’t have to be on my feet for a long time to cook it. 

I worked full time for many years and quite often I resorted to eating out at fast food places, so I didn’t have to come home and cook. When I started my weight loss journey, I needed to stop eating out so much. I didn’t avoid it; it is never good to restrict foods. I gave myself a rule of eating out one time a week. 

So, I had to find quick, easy family friendly meals to cook when I got home from work and all the boys’ extracurricular activities. 

This one does not disappoint. It is a dump and go. You dump it in the pot, set the time and then go about your business until the pot is done. 

There are also so many ways you could use this dish. I have rolled it up in corn tortillas and topped it with more salsa and cheese, baked it in the oven to make enchiladas. Most of the time we just spoon some in a tortilla and top it with lettuce, add some black beans and eat it like that. And other times I have made rice bowls with it. I add peppers to it also to get more veggies in my meal.

Instant Pot Green Chicken Enchiladas

This is a simple, dump and go instant pot meal. Super easy and fast to make.

Equipment

  • 1 Pressure Cooker

Ingredients
  

  • 1 pound chicken breasts About two chicken breasts
  • 1 jar clean green salsa It can be hatch green chile, or tomatillo salsa
  • 1 cup cheddar cheese
  • 4 ounces hatch green chili's For spicy buy the hot ones

Instructions
 

  • Put the chicken breasts and green salsa into the instant pot
  • Set your instant pot to pressure cook for 7 minutes
  • Quick release when it is done.
  • Take chicken out and shred either using two forks or a hand mixer
  • Add cheddar cheese and stir until melted
  • Serve on a tortilla, a bed of rice or a bed of greens

Notes

Sometimes the chicken will burn to the bottom. It might help to put a little bit of the salsa down first to avoid getting the burn signal. If your chicken is frozen cook for 10 minutes instead of 7 minutes. 
Adding peppers and black beans is a great option to add more veggies and protein!
