Chicken Tortilla Soup

My goal in my weight loss journey was to find healthy and delicious recipes. In fact, I didn’t try to lose my weight at first because I was always scared I would be missing out on all the good food. I am a Cajun girl at heart where delicious food was centered around everything. So, for the longest time I refused to try to start eating healthy. 

This was when I worked with my husband, Jason, and we came up with great ideas for food that was healthy and delicious! 

When I got my instant pot for Christmas about two years into my weight loss journey, it was a game changer. It allowed me to go out on my own and start learning how to cook. Before then, I relied on  Jason to do all the cooking. 

This is why I have so many instant pot recipes on my blog. It is where I started, and my hope is to give you a place to start. If you are scared of the pressure cooker, using a crockpot will do just fine for all of these recipes. But I challenge you to try the pressure cooker, especially if you are new to cooking and want to learn more. 

This is such a simple, and delicious meal. I love eating soups for dinner. They are light on my stomach, and it makes it so much easier for me to fall asleep. 

It is also a perfect meal to cook on a cool day to warm up. It is a dump and go in the instant pot so on those days where your feet are killing you, you have a headache or you just plain miss hanging with your little ones it is the perfect option. 

I love that I don’t have to remember to defrost meat for this meal. Your chicken can be put into the instant pot frozen and all you have to do is cook it a little longer, about 3-5 minutes. 

If you feel it isn’t thick enough, then adding a little cornstarch and water can help thicken it. 

Soups are a great way to go low carb. I will use this recipe when my lunch is more carb heavy.

Plus, it is stocked full of vegetables which is an added bonus! It’s always great to have a meal with veggies you can’t taste!  This will for sure be a family favorite. 

Instant Pot Chicken Tortilla Soup

This soup is a low carb and delicious. It is quick and the perfect dish to make after a long day of work. Top it off with your favorite toppings, guacamole, sour cream, tortilla chips, and even cheese.

  • 1 Pressure Cooker


  • 1 tsp. Ground cumin
  • 2 tsp chili powder
  • 1 tsp minced garlic
  • 2 tsp salt
  • ½ tsp black pepper
  • 1 lb chicken breasts
  • 10 oz can fire roasted tomatoes
  • 14.5 oz can diced tomatoes
  • 1 cup black beans
  • 1 cup corn
  • 1 medium onion
  • 1 jalapeno
  • 1 can diced green chilis
  • 4 cups organic chicken broth
  • Optional Toppings
  • Corn chips
  • Sliced Avocado
  • Mexican blend cheese
  • Hot sauce


  • Instant Pot Directions:
  • Add all of the ingredients to the pot and cook for 7 minutes. If your chicken is frozen, cook for 10 minutes
  • Take chicken breasts out and shred with forks. Add back to the pot.
  • Season to taste. Top with cheese, and tortilla chips!
  • Stove-Top
  • Add all the ingredients to the pot. Cook on high until boiling. Bring to a simmer.
  • Cook for thirty minutes or until chicken breasts are cooked all the way through(Internal temp 165)
  • Shred chicken when cooked and add back to the pot. Season to taste.


This is a dump and go recipe. You will add all of the ingredients in the pressure cooker and set it and let it cook. You can cook this in the instant pot or the stove top. But it is perfect for the instant pot to set it and be able to do other things. Perfect for cooking after a long day of work.
